Snacking Cakes Recipe #4: Cocoa Yogurt Cake

Today I made my next recipe from Snacking Cakes by Yossy Arefi, the Cocoa Yogurt Cake. This cake is another one-bowl recipe with ingredients that I always have on hand simply whisked together. The glaze on top requires a little bit of planning ahead, as the cake must be completely cooled before pouring it on top.

Overall, the cake is a solid chocolate cake recipe to have around for when there is not the time to bake a fancy, three-layer chocolate cake. The texture of the cake was moist and fluffy, and the flavor was nice and chocolate-y. The cake was not as interesting as the Browned Butter, Pecan, and White Chocolate Cake from Snacking Cakes and instead more traditional. The glaze included in the recipe is a cocoa glaze, but I think I would try a different variation of the glaze next time to give some contrast to the cake. I thought the glaze was the weakest part of the cake.

I would make this again, but in a different format (like cupcakes with frosting, or the Bundt cake variation with a strawberry/vanilla/espresso glaze as suggested in the book). I take my chocolate desserts very seriously, and this one felt a little dull.

Onto the next one – grapefruit white chocolate cake. I am excited for this one as it’s grapefruit season, and the last white chocolate cake was so good!
